Newton Circus 302 Fried Kway Teow

Ah… the familiar taste of a great fried kway teow. I have had these from the time the stall was located in the run down coffee shop at Newton. Two addresses later, it tastes just as good – nice and moist with just enough dark sweet sauce to bring out the flavours and generous helpings of bean sprouts, lap cheong (waxed meats) and cockles to give it texture. I am convinced that the one other "secret" ingredient is the way the chef tosses the noodles. With so many years at the job, I have spotted the chef "rocking" in that same motion even when not cooking!
